The old adage goes when life give syou lemons, make lemonade. Which begs the question, if the weather gods give you Botrytis, should we not learn from lemons and make a Botrytis Semillon from the Noble rot?

Season

The 2023 season was long and cool. Steady and consistent ripening matched with low crop loads ensured all varieties ripened well with the benefit of good-sized canopies. Mild, cool nights enhanced flavour development. The resulting wines are richly flavoured and high in quality with incredible aromatics.

Vinification

Handpicked Semillon grapes were pressed to extract pure juice (450L/t). After 6-hour settling, the juice was moved to new and seasoned 228L Barriques. Cultured yeast enhanced character during a 3-4-week fermentation. The wine aged on lees in a blend of 25% new and 75% seasoned French oak for 9 months.
