Season
The 2026 Adelaide Hills vintage was defined by a long, slow ripening season. A cool, wet spring delayed flowering and pushed harvest later than usual, allowing fruit to develop exceptional flavour intensity while retaining bright natural acidity. The result is wines of remarkable purity, aromatic complexity and elegance.
Vinification
Canes were cut two weeks before harvest to concentrate the grapes’ natural sugars, with bunches hand-selected for desiccation and botrytis. The fruit was whole-bunch pressed before cold settling and a slow, cool fermentation. Fermentation was stopped once the desired balance of sweetness, alcohol and acidity was reached.
