Season
2025 was the driest growing season on record in the Adelaide Hills. This led to slightly lower yields and a very early start to the vintage. We avoided severe heat waves, but it was our quintessential cool Adelaide Hills nights that allowed the fruit to develop beautiful flavour and hold onto its natural acidity. The wines from 2025 have delicacy, yet depth, perfume and purity, all the hallmarks of great cool climate wines that will continue to develop with age.
Vinification
Picked in the early morning, the fruit spent one hour on skins before being pressed to stainless steel. After settling, clear juice was racked and inoculated with an aromatic yeast, then underwent a slow, cool fermentation to preserve freshness and enhance varietal character.
