Season
2025 was the driest growing season on record in the Adelaide Hills. This led to slightly lower yields and a very early start to the vintage. We avoided severe heat waves, but it was our quintessential cool Adelaide Hills nights that allowed the fruit to develop beautiful flavour and hold onto its natural acidity.
Vinification
Night-harvested fruit was crushed, pressed, and cold-settled, with free run and pressings kept separate. Fermented in stainless steel with cultured yeast, the final blend was selected from multiple sites to balance bright acidity with layered green and tropical fruit notes.

Following a record-breaking dry growing season with corresponding low yields, expect a marked herbaceous quality to this wine. This is all about a sauvage-style wildness and taut intensity. Aromas of cut grass, asparagus, lemongrass, pea shoot, citrus and quince with a hint of passionfruit. The palate comes well balanced – citrus-herbals-acidity with the addition of a smooth textural creamy flow – and you can’t mistake that wild lemongrass, sage, gooseberry strong finish. Crisp, crunchy texture, just-ripe pineapple with dashes of passionfruit, a good squeeze of lime and cucumber in tonic water characters abound.
