Our Cuvée Blanc de Blancs is created using the time-honoured ‘méthode traditionnelle’, ageing for extended time in bottle and disgorged on demand. Aromas of lemon zest and brioche dough with a delicate palate of vanilla bean and shortbread balanced by a fine bead and crisp acidity.

Nestled in the picturesque Adelaide Hills, our Hahndorf vineyard at an elevation of 450m is the source of the Estate Cuvée Blanc de Blanc. Harvested from a single south-facing block on our Ravenswood Lane vineyard, this high-altitude site, containing sparkling Chardonnay clones G9V7 and B277, contributes to the unique character of our cuvée.
Season
A relatively wet start to the 2022 season with high rainfall in winter and full soil moisture profiles in spring. A very dry but unseasonably cool summer resulted in a long and steady ripening period across both whites and reds. This aided fruit intensity and flavour development whilst maintaining great natural acidity.
Vinification
Hand-harvested in the early morning, fruit was whole-bunch pressed with only the free-run juice (550L/T) retained to preserve purity and acidity. Fermentation occurred in a mix of 228L French oak barriques and 300L hogsheads, with juice inoculated using a Chardonnay-specific yeast to enhance varietal character and maintain freshness. The wine matured on lees for 10 months in a cool underground cellar, completing malolactic fermentation. The final base wine included 15% new oak, with the remainder in seasoned barrels. Secondary fermentation took place in bottle, where the wine remained on lees for 34 months before disgorgement in November 2025 (and February 2025), with a dosage of 5.0g/L.
