Our Cuvée Blanc de Blancs is created using the time-honoured ‘méthode traditionnelle’, ageing for extended time in bottle and disgorged on demand. Aromas of lemon zest and brioche dough with a delicate palate of vanilla bean and shortbread balanced by a fine bead and crisp acidity.

Nestled in the picturesque Adelaide Hills, our Hahndorf vineyard at an elevation of 450m is the source of the Estate Cuvée Blanc de Blanc. Harvested from a single south-facing block on our Ravenswood Lane vineyard, this high-altitude site, containing sparkling Chardonnay clones G9V7 and B277, contributes to the unique character of our cuvée.
Season
Cool conditions in spring favoured excellent soil moisture, followed by a warm and steady November, absent of extreme weather events. Slow ripening conditions aided acid retention and gradual flavour development across all varieties. An exceptional vintage for the Adelaide Hills.
Vinification
The hand-harvested fruit was whole-bunch pressed early in the morning, with only the free-run juice (550L/T) retained for fermentation, preserving purity and acidity. Fermentation occurred in a mix of 228L barriques and 300L stainless steel hogsheads. A portion was inoculated with chardonnay-specific yeast for varietal expression, while the rest was wild fermented for complexity. The wine matured on lees, completing malolactic fermentation over 9 months. After blending, 13% new oak was included, and the wine underwent secondary fermentation in the bottle, spending 32 months on lees before being disgorged in August 2024 with a 4.0g/L dosage.
