Our Heritage Late Disgorged Cuvée is crafted using the time-honoured méthode traditionnelle, aged 8–10 years in bottle and disgorged on demand. Baked apple and preserved citrus lead, layered with brioche, sourdough and gentle spice. The palate shows oyster shell minerality and candied lemon, with a fine, persistent mousse driving a long, dry finish. Low dosage allows the wine’s natural depth and structure to shine.

Situated in Hahndorf, Adelaide Hills, at an elevation of 450m, this wine originates from a singular south-facing block within our Ravenswood Lane vineyard. Harvested on February 17th, this elevated site features sparkling Chardonnay clones G9V7 and B277, adding unique character to the blend.

A wet winter and spring set the vines up well, followed by a mild, even summer. Steady ripening delivered excellent flavour at moderate sugars while retaining vibrant natural acidity. The 2017 wines show balance, purity and structure, with bright fruit and strong ageing potential.

Vinification

Handpicked Chardonnay was whole-bunch pressed, retaining only the finest free run. Fermented in French oak and stainless steel, the base wines matured on lees for nine months before blending (6% new oak). Bottled for secondary fermentation, the wine spent eight years on lees and was disgorged with a low 1.5 g/L dosage for a precise, dry finish.
