2025 Estate Chardonnay

$60.00 / bottle

A single-vineyard Chardonnay with yellow peach and nectarine aromatics, lifted by white florals and subtle matchstick, with hints of brioche. The palate is generous and layered, showing ripe peach, gentle baking spice and a creamy texture, balanced by bright acidity and a long, fresh finish.

Vineyard Location

Vineyard Location

Sourced from a single estate parcel in Hahndorf (396m elevation) on eastern and south-facing slopes. Shallow, free-draining Stonyfell Quartzite soils with clay subsoil promote low vigour and small, intensely flavoured bunches.

Season

Season

2025 was the driest growing season on record in the Adelaide Hills. This led to slightly lower yields and a very early start to the vintage. We avoided severe heat waves, but it was our quintessential cool Adelaide Hills nights that allowed the fruit to develop beautiful flavour and hold onto its natural acidity.

Vinification

Vinification

Handpicked in the cool of early morning, the fruit was whole-bunch pressed with only the pure free run retained. Cloudy juice was sent directly to French oak barriques and puncheons for full wild fermentation on solids. The wine fermented slowly in our cool underground cellar, progressing through partial malolactic before spending nine months on lees with regular stirring. A blind 15-barrel selection (31% new oak) was assembled and rested briefly on lees in tank prior to bottling.

In a word: refined. Sometimes, it only takes one word to describe a wine such as this, a wine that reveals its cool climate nature beautifully citrus bright and delivers it across impressive filigree-fine acidity. Aromas of citrus, nectarine, white peach, lime zest with a touch of hazelnut. The palate is taut and compact, really elegant, layered and, yes, refined. The oak component, 49% new French oak, comes in nicely integrated, contributing to the wine’s texture and length, which is impressive. Equally so, the depth of white stone fruits, citrus, grilled nuts and almond nougat complexity still on the rise.

Stylish and enticing, the bouquet shows white flesh nectarine, lemon pith, vanilla and hazelnut aromas with a hint of oatmeal. The palate delivers excellent weight and expansive mouthfeel, wonderfully structured by beautifully infused acidity. Harmonious and superbly long on the finish. At its best: 2025 to 2033.
